When I was working in family medicine, I noticed something again and again: many of my patients weren’t eating any vegetables. They would come in with concerns about weight, blood sugar, or energy, and when I asked about their meals, vegetables were often missing completely.

What struck me was that most of them weren’t resistant to eating healthier—they just didn’t know how to make vegetables part of their everyday lives. And when they did try to “eat healthy,” it often meant cutting out foods they loved, which only made the changes harder to stick with.

That’s when it clicked: instead of focusing on eliminating foods, what if we focused on adding more vegetables​?

Vegetables are full of nutrients, fiber, and color that can transform health—from supporting blood sugar to boosting energy. But more importantly, adding vegetables is doable. It’s not about restriction or giving things up—it’s about filling your plate with more of what helps you thrive.

That realization became the heart of Memoirs of a Salad. I don’t believe in telling people they can’t have the foods they enjoy. Instead, I help them discover simple, delicious ways to make vegetables the star of the plate.
